This is the Christian theological spin on the fact that our thoughts are not reality and that the word is not the thing. Our thoughts about God are not God.
In fact, the world is a projection of our thoughts. If this is true then our god is a projection of our thoughts as well. Our theological words articulate our thoughts about our god, not that which is beyond them.
I remember the first time I read Barth's
The Epistle to the Romans
many years ago. It rocked my world because the infinite qualitative distinction between God and mankind is the thrust of Barth's theology. Even though he modified this later in his life to become what I think is a more unified idea, it still represented the cornerstone of his contribution to Christian theology and Church dogmatics.
